Super Easy Peanut Butter Cookie Recipie

This is a very basic, easy peanut butter cookie recipie that doesn't even require flour. They taste great and are quick to make.

One cup of peanut butter (crunchy or regular... doesn't matter)
One cup of sugar
One egg

Mix all ingredients together. Roll dough into balls and place on a greased cookie sheet, silpat or parchement paper. Using a fork, flatten the balls leaving a waffled pattern on them. Bake at 350 for about ten minutes. Check periodically to be sure they don't burn. Enjoy!

Recipe: Pasta with Tuna Caper Sauce

This recipe is simple on days you can't think and is one that you can do on auto-pilot easily. Very little preperation and most ingredients are to taste so you can eyeball the measurements. It also freezes really well. Make on a day you feel really well and freeze in serving portions with or without pasta for a meal you can nuke in the microwave until hot any night you need to. I think it tastes even better the next day for lunch!

Easy After-Shopping Comfort Food Meal Roast Beef

Before you leave, arrange these items in a roaster in this order:

1 large onion chopped
1 beef roast (frozen is FINE)
1 can or bottle of beer, poured over all (You can use a bottle of Coke if you do not wish to use beer)
Sprinkle of thyme, pepper and salt over roast

Cook tightly covered at 350º for 20 minutes. Then reduce to 250º and cook covered for at least 5 hours. You will have the most delicious roast beef you ever had when you return home, ready to eat! Bring home a salad and a crusty loaf of French bread and you're good to go!
