Fresh dill is better than dried for this recipe. So I don't waste fresh herbs, when I get them home from the store I wash them and, while the plants are still wet, I stick them in a freezer bag & pop them in the freezer. I take it out and cut it as needed. If you have lots of spoons you can chop the herbs up and put them in an ice cube tray with some water & stick it in the freezer. Then later on if you are making soup, for example, you can just take out a fresh herb ice cube and throw it in the pot.

Since I have to watch my fat intake, I haven’t had full bodied, high fat ice cream in ten years, and eat low fat, but still high calorie frozen yogurt only a few times a year. Here’s a simple, healthy, non-fat alternative I indulge in, frequently. It’s especially delicious on hot summer days. You can use any blender, but the best results come from a Vitamix high performance blender.

Sometimes there are times in life that we’re too busy, too sick, too tired, or too over-worked to stop at the grocery and get fresh food. What happens when we’re stuck in the house with no fresh food to eat? Worse: what happens when you have to feed others with the bare minimum of food in the house? Though canned food sometimes gets a bad reputation for being packed in sugars, salts, and a can, canned food can be very convenient to have on hand for those stretches of time you know you won’t be able to make it to the market. But, what canned food is the best to eat? What’s the healthiest? What can you make and serve with canned food? Here I’ll show some quick and easy ways to perk up your culinary life using simple canned foods that are cheap, easy to store, and last a long time; further, these recipes are healthy and can be altered to your diet and taste.

Remember carrots are full of beta-carotene which is an anti-oxidant and by cooking carrots slightly (which you’re doing here) it helps your body absorb the beta-carotene.

This is something my grandmother used to make. She never measured and went on taste alone, but that shouldn't matter because it's almost impossible to mess this one up.

I must confess at the outset, that I am not much of a cook. I don't measure, unless I'm following an instruction book. And because I'm on a restricted diet, I'm usually cooking just for myself as my husband likes regular food. But there is one thing I make that has survived all the changes in my dietary habits and still tastes good enough for my husband to eat: pasta salad.

Being a Southern girl, I love comfort food especially when I am feeling badly. It takes me back to when I was little and sick, and my mom making this dish to make me feel better. The only difference is she would do this from scratch and I just don't have the energy or the inclination. This is quick and easy.

Whoever thought of this great new gadget must have been sitting next to me at the diner, whenever I angrily rip open one of those sugar packets. Either I tear it and sugar flies everywhere, or I can't get the darn things open at
