Use a grill or the fire grate to fix a quick, hot meal that is very popular in the Southwest and healthy for you, too!

Buy some thin chuck roast slabs and cut them into small strips for frying. Dice up onions, green peppers (can add other peppers if you wish). You can do all this before you go, so it’s ready to throw on the grill once you get there.

Best pan for it is a wok pan or a sauté pan, but your favorite fry pan will work, too.

Put a bit of vegetable oil in your pan and warm it up. Start with the meat, browning it all nicely. (I put some Worcestershire sauce on mine to help tenderize it, along with some salt and pepper.)

After the meat is almost done, I add the vegetables and treat them like stir fry. They don’t take very long to cook – don’t overdo the cooking or they get mushy.

Have a package of tortillas there, ready to go. (You may need more than one depending on the size of the crowd.)

Have them put their tortilla on a plate, you add some meat/veggie mix in the center and they can be eaten as is, or with some salsa to add more flavor.

You can continue to cook them here and there during the event as long as folks want some (if you choose).

They are fajitas and folks down here are crazy about them. I bet your family would enjoy them, too!
