Recipe: Shredded Barbque Chicken

This is something my parents taught me to make. They own a restaurant in NC and if their customers knew that this tasty sandwich was so easy to make they would be surprised.

As most people know BBQ is big in the south and you will always find Beef and Pork, but we had a special customer who didn't eat beef or pork, only chicken and they always loved the smell of BBQ so my dad came up with a way to have a new sandwich item and please this customer.

Take a pound or however much of chicken you want and boil it until done. I usually use chicken tenders. When they are done boiling let them cool down and you can either shred the chicken by hand or if you are like me and
have arthritis, then place the chicken in your chopper or food processor and shred that way.

Then simply place your shredded chicken in a bowl and mix in your favorite BBQ sauce and serve on a bun with slaw and pickle.

This is so easy and quick and not to mention tasty. I hope you like it as much as I do.
